Strawberry Margaritas! From Scratch!

I made these for friends on one of San Francisco’s only hot nights of the year and sat and drank them in my garden and they were delightful.  I had them with Herradura tequila and Cointreau but Britt had them virgin and they are delicious and refreshing that way too.

I made each drink separately in a shaker but for a party I think it would be easier to put all the ingredients in a big pitcher, keep in the fridge and then just pour over ice.

Strawberry Mix:

1 pint of strawberries, chopped

1 tbsp sugar

Chop up strawberries, mix with sugar and also smash them a bit to really get them macerated and flavorful.  Set them aside.

Lime Margarita Mix:

 2 cups fresh lime juice

3 cups simple syrup:

Combine 1 ½ cups white sugar with 1 ½ cups water in a sauce pan.  Cook on medium heat, stirring constantly until it comes to a light boil and sugar has dissolved.  Let cool.  Combine with the lime juice in a pitcher.

Lime Sugar Salt For Rim

Combine equal parts sugar and salt so that it creates a pile on a small plate.  Mix in zest of one lime.  Rub a lime on rim of glass and press rim into the mixture.

For single drinks:

In a shaker add ice, a scoop of strawberry mixture and the lime mix.  Here are the bartender counts/ ounce amounts for individual drinks.  It’s easier just to do a count to keep track of how much alcohol you’re putting in but if you aren’t comfortable with that, I have included the amount of ounces.  (To count alcohol amounts like bartenders do, do a steady pour and count a little faster that one one thousand, two one thousand, three one thousand etc.  It’s more like one pause, two pause, three pause.  A count of two equals one ounce of alcohol or liquid.)

In a shaker add:

Scoop of ice

8 count or ½ cup of lime mix

4 count or 2 oz. (more if you like booze) good tequila

2 count or 1 oz orange liquer

1 scoop strawberry mixture

Shake vigorously for twenty seconds.  Open up shaker and empty all the contents, including strawberries and ice into the glass.  (lime mix is tart so the watered down ice makes it perfect and having the alcohol soaked strawberries in your drink is heaven.)

Party Pitcher:  Makes about six drinks.

In a large pitcher mix together all ingredients.  Chill in the refrigerator.  Pour into salt/sugar rimmed glasses with ice!

¾ orange liquer

6 big tablespoons of strawberry mixture
